Similar in style to Korean barbeque and Japanese Sukiyaki, Thai sukiyaki is hot dining experience that creates a spicy communal atmosphere.

Thai Sukiyaki is a shared cooking and eating experience that possesses a similar one pot style to that of fondue and Japanese Sukiyaki, with the major difference being the chilli addition of the Thai variety.

The Thai sukiyaki dining experience requires a sukiyaki pot (electric wok or crock pot) to be positioned in the centre of the dining table, surrounded by platters of fresh vegetables, meat and seafood, all of which are then cooked in a steaming broth, contained in the sukiyaki pot.

Thai Sukiyaki Cooking Ingredients

Freshly prepared and ready to cook, the Thai sukiyaki ingredients are presented on the dining table, positioned around the sukiyaki hot pot. Ingredients are organised on platters which comprise:

  • The sukiyaki meat platter – containing fish balls, pork balls, thinly sliced raw beef, shrimp and scallops.
  • The sukiyaki vegetable platter – containing Chinese cabbage, Thai celery, Thai water spinach, Thai straw mushrooms, snow fungus mushrooms, baby corn and shitake mushrooms.
  • The sukiyaki tofu, egg and noodle platter – containing firm tofu, vermicelli noodles, egg tofu and whole eggs.
  • The sukiyaki sauce – a spicy sauce made from chilli, garlic, lime, sesame oil and sesame seeds (one bowl for each diner)
  • The sukiyaki condiments plate – containing: fresh chilli, minced garlic, quarters of lime and coriander leaves (one plate for each diner).

Table Setting and Utensils for Cooking and Eating Thai Sukiyaki

In addition to the sukiyaki hot pot and cooking ingredients, the Thai sukiyaki table is set with the following utensils for each diner:

  • One small Asian style serving bowl (per diner)
  • One set of chopsticks (per diner)
  • One small bowl of white rice per diner (optional)
  • One small cooking net with extended handle* (per diner)

* Asian style sukiyaki cooking nets can be found in most Asian supermarkets. The net (small sieve) measures roughly 12cm in circumference and the handle is approximately 15cm long.

The Thai Sukiyaki Cooking and Eating Method

With all guests and all cooking essentials positioned on the dining table, everything is ready to enjoy the fun of the communal Thai sukiyaki experience.

  • Add half of the sukiyaki broth to the pot and bring to the boil.
  • Add an assortment of vegetables while the sukiyaki broth is boiling, using roughly half of the vegetable on the platter. All diners can take part in this and all other stages of the sukiyaki cooking process.
  • Add ¼ of the beef to the sukiyaki pot
  • Maintain the sukiyaki pot at a rolling boil for three to four minutes.
  • Reduce the heat slightly and add half the fish balls and pork balls.
  • Crack one of the eggs into the broth and stir using chop sticks.
  • Add half the tofu and egg tofu slices
  • While the broth is simmering, diners can cook individual pieces of seafood and beef by placing them in their cooking net and submerging the net in the sukiyaki broth. When cooked, the seafood or beef is then dipped in the sukiyaki sauce and eaten immediately.
  • The sukiyaki cooking net is also used to cook the vermicelli noodles. Place some noodles in the net and submerge in the simmering broth. The noodles take just one or two minutes to cook. Once cooked, the noodles are then added to individual small serving bowls.
  • By the time each diner has cooked and eaten a few pieces of suki - and prepared the noodles in their small serving bowl – the sukiyaki pot should have been simmering away, with the result that the sukiyaki soup is now ready to eat.
  • Using the small serving bowl containing prepared noodles, each diner adds their choice of condiments to their individual bowl. In addition to condiments, some sukiyaki sauce is added by each diner. Here the diner can decide if they want mildly spicy (a little sukiyaki sauce) or very spicy (a lot of sukiyaki sauce).
  • Once each diner has finished customising their individual bowl, sukiyaki soup is added, the contents mixed together and then eaten using chopsticks and a spoon.
  • When the content of the sukiyaki pot begins to deplete replenish the pot with the remaining ingredients and broth, repeating the process for the second serving.
